สูตรอาหาร - ขนมจีนน้ำยากะทิ - Kanom Chine

ส่วนผสม

1. พริกแห้ง 50 กรัม
2. มะพร้าวขูด 1 กิโลกรัม
3. กระเทียม 100 กรัม
4. คั้นหัวกะทิ 2 ถ้วย หาง 8 ถ้วย
5. ตะไคร้ 50 กรัม
6. น้ำปลา 1/2 ถ้วยตวง
7. ปลาช่อน 1 กิโลกรัม
8. น้ำปลาร้าหรือ 1/2 ถ้วยตวง
9. หัวหอม 100 กรัม
10. ปลาอินทรีย์เค็ม 1/4 ถ้วยตวง
11. ข่า 2 ช้อนโต๊ะ
12. ขนมจีน 2 กิโลกรัม
13. กระชาย 500 กรัม
14. น้ำสำหรับต้มปลา 6 ถ้วยตวง

วิธีทำ

1. เตรียมเครื่องน้ำพริกทั้งหมดลงต้มพร้อมน้ำเปล่า พอเดือดใส่ปลาที่ล้างสะอาดแล้วลงต้มให้สุก
2. ตักเครื่องน้ำพริกและปลาขึ้น แกะก้างและหนัง โขลกเนื้อปลาให้ละเอียดพักไว้
3. โขลกเครื่องน้ำพริกที่ตักขึ้นพักไว้ให้ละเอียด
4. ใส่น้ำต้มปลาละลายเครื่องน้ำพริก กรองเอาแต่น้ำพริกข้น ๆ ไม่ใช้กาก ทำเช่นนี้ 2-3 ครั้งจนน้ำพริกสีจาง
5. ใส่น้ำพริกผสมกับหัวกะทิตั้งไฟพอเดือด ใส่เนื้อปลา เติมหางกะทิ น้ำปลา น้ำปลาร้า เคี่ยวไฟอ่อน จนน้ำยาเริ่มข้น ชิมรส
6. รับประทานกับผักเหมือด เช่น ถั่วงอก ผักกาดดอง ถั่วฝักยาว ผักกระเฉด พริกป่น ไข่ต้ม ฯลฯ

ประวัติอาหารอีสาน

อีสาน เป็นดินแดนที่แห้งแล้งกันดารที่สุดของประเทศไทย บทเพลงของดินแดนอีสานจึงมักบรรยายถึงความทุกข์ยากแสนเข็ญ นาแล้ง ข้าวกล้าเก็บเกี่ยวได้ไม่พอกิน หลาย ๆ ครอบครัวจึงต้องทิ้งเมีย ทิ้งลูก มุ่งหน้ามาเป็นกรรมกรขายแรงงานในเมือง แม้ว่าอีสานจะอดอยากเพียงไร ชาวบ้านก็ต้องดิ้นรนหาอาหารเพื่อดำรงชีวิตกันต่อไป

อาหารพื้นเมืองของชาวบ้านแถบอีสานจึงมีอาหาร พวกแมลงหลายชนิด ไม่ว่าจะเป็น จิ้งหรีด มดแดง ตั๊กแตน จักจั่น ดักแด้ แมงกุดจี่ แมงกินูน ฯลฯ แม้ว่าหลาย ๆ คนได้ยินแล้วเกิดความรู้สึกแตกต่างกันไป แต่แมลงเหล่านี้คือแหล่งโปรตีนที่หล่อเลี้ยงชีวิตเด็ก ๆ ชาวอีสานเติบโตขึ้นมาได้

อาหารอีสานนอกจากจะมีแมลงแล้ว ยังใช้เนื้อสัตว์ทีหาได้ในท้องถิ่นเป็นส่วนประกอบของอาหาร เช่น ปลา ซึ่งจะรับประทานตั้งแต่เป็นลูกปลา เรียกว่า ปลาลูกครอก (ลูกปลาช่อน) จนปลาตัวโต กบ ก็เช่นเดียวกันรับประทานตั้งแต่ลูกกบซึ่งเรียกว่า ฮวก คือลูกอ๊อด ที่กำลังจะกลายเป็นกบ เริ่มมีขา แต่ก็ยังมีหาง ทางอีสานเรียกว่า ฮวก กุ้งฝอย อึ่งอ่าง ปูนา หอยโข่ง หอยขม สัตว์อื่น ๆ เท่าที่หาได้ เช่น กระต่าย หนูนาแย้ กิ้งก่า งู จนกระทั่งนกต่าง ๆ ไก่ เป็ด หมู เนื้อ บ้าง

คนอีสานจะรับประทานข้าวเหนียวเป็นอาหารหลัก และโดยทั่วไปจะนึ่งข้าวเหนียวด้วยหวด หวด คือ ภาชนะที่เป็นรูปกรวย ทำด้วยไม่ไผ่ ซึ่งจะต้องใช้คู่กับ หม้อทรงกระบอก คนอีสานจะต้องแช่ข้าวเหนียวดิบกับน้ำพอท่วมไว้ตอนกลางคืน พอรุ่งเช้าจะนำหม้อทรงกระบอกใส่น้ำตั้งไฟ กะให้น้ำอยู่ต่ำกว่าก้นหวด พอน้ำเดือดจะสงข้าวเหนียวที่แช่ไว้ใส่หวด แล้วยกหวดวางบนหม้ออีกที หาฝาหม้อปิดข้าวเหนียวไว้ ไอน้ำที่พุ่งขึ้นมาจะทำให้ข้าวเหนียวสุก และมีกลิ่นหอมของไม้ไผ่ติดมาด้วย พอข้าวเหนียวสุก ใช้ไม้พายกลับข้าวเหนียวข้างล่างขึ้นมาข้างบน แล้วปิดฝาไว้ ข้าวเหนียวก็จะสุกทั่วกัน

From a sporty yellow Ferrari to a pair of Jimmy Choo shoes straight from the set of Sex and the City, Siam Paragon is a shopping mall without rival in Southeast Asia when it comes to luxury goods.

The Food Hall

With so much shopping on the cards, there's no need to go hungry... 6. รสดีรสต้มยำ 1 ซองเล็ก
7. ชูรส 1~2 ช้อนชา
8. น้ำปลา 2~3 ช้อนโต๊ะ
9. น้ำมะนาว 3~ 4 ช้อนโต๊ะ
10. น้ำมะขามเปียก 7~8 ช้อนโต๊ะ
11.พริกป่น 1~2 ช้อนโต๊ะ
12. พริกขี้หนูสดตำหยาบ 2~3 ช้อนโต๊ะ
13. ใบโหระพา 10~15 ใบ
วืธีการปรุง
1. ใส่น้ำในหม้อเบอร์ 32 ประมาณ 1/2 หม้อต้มให้เดือด
2. ใส่ตะไคร้,ข่า,ใบมะกรูด,หอมแดง ทั้งหมดที่เตรียมไว้ ทิ้งไว้ให้น้ำเดือด
3. ใส่ขาไก่ที่เตรียมไว้ต้มจนขาไก่ยุ้ย
4. ใส่รสดีชูรส
5. ใส่น้ำมะขามเปียก
6. นำถ้วยชามมาวางไว้และใส่โหระพา พริกป่น พริกขี้หนู น้ำปลา มะนาว ทั้งหมดลงไปในชาม
7. ตักต้มยำซุปเปอร์ลงไปในชามแล้วลองชิมดู เผ็ด เปี้ยว เค็ม ชอบรสไหนก็เพิ่มลงไปได้เลย
